Marcus Guiliano is the owner of Aroma Thyme Bistro, a gourmet restaurant in Ellenville New York whose beer list is about 8 pages long! Marcus is a chef with a degree in Culinary Arts and is very passionate and knowledgeable about beer, wine and spirits. He helped start http://thefoaminghead.com with Kevin Burns (a frequent guest reviewer of mine) to get accurate information about craft beer and New York-based beer out to the public.
In part 2 of this interview, Marcus talks about: his opinion on the so-called hierarchy of quality of beer; his opinion of the three-tier distribution system and how he works with it as a individual restaurateur; and what the future holds for the craft beer industry.
Be sure to check out Part 1, wherein Marcus talks about: why he only carries craft beer in his restaurant and the beer dinners they hold; his personal history with craft beer; how beer is taught in the culinary arts field; beer versus wine; why he doesn't homebrew; his favorite styles and breweries; and how he gets BMC drinkers into craft beer.
